Chili Lime Salmon Tacos

The other night we made these salmon tacos and I knew I had to post them on my blog. I discovered this recipe a few years ago, actually, and this easy-to-throw-together meal has been a hit in our home and with guests. The four-ingredient slaw is easy to assemble the day before or morning of when you have about 5 minutes. That means when it’s time for dinner all you have to do is mix the 3-ingredient spice rub, (which I loved so much a made a separate post here) mash your avocado, and throw together a side or two, if you want them, while the salmon cooks in the oven. Easy cooking AND easy cleanup!

This week I had the slaw already prepped. When I got home with baby girl she watched me while I prepped the salmon and salad. Then I got her to bed while my husband threw the salmon in the oven. Once baby was down we just had to mash the avocado and heat the tortillas and dinner was ready. It was so quick and super delicious! Oh, and I bought more salmon than I knew we would eat so we could have salmon on a couple of mango avocado salads for lunch during the week. I always love it when dinner leftovers provide a lunch or two during the week!

Dinner for the Family with Young Athletes

I talk with the families I work with a lot about easy dinners when the athlete has evening games or practices. This could be a great option because it can be thrown together so quickly. If the slaw and spice rub are prepped you can easily throw it all together after a practice or game while everyone is cleaning up for dinner. It has filling healthy fats, the hard-to-get omega 3’s from the salmon and monounsaturated fat in the avocado, some veggies in the slaw, and carbs from the tortilla. I think it goes great with diced mango on the side, which adds some fruit, fluid and additional quality carb to your athlete’s plate!
